The coffee granita is the perfect thing for one or for a crowd. It's super easy to make and needs only 2 ingredients and a little time.

First brew up 3 cups of coffee to the strength of your liking. PRO TIP: Use decaf if this is going to be a late afternoon or after-dinner dessert. 

To a large glass measuring cup. Add 3/4 cups of sugar. (Side note: coconut sugar is a good option too with a lower glycemic index, if you are watching those things.)

Then add your 3 cups of brewed coffee.  Stir until the sugar is completely dissolved. PRO TIP #2: This is easier with HOT coffee.

Transfer the sweetened coffee to a large (13x9) metal baking dish. You want to use a large shallow pan, so the coffee is spread thinly in it. PRO TIP #3: The metal pan will help it freeze faster and isn't subject to temperature shock like glass is.

Place the pan in the freezer for about an hour or until the edges are icy.  With a fork, scrape the ice crystals from the edges.  Return to the freezer for 30 more minutes. 

Remove from the freezer and rake with a fork, breaking up the ice crystals.  Return to the freezer and repeat this step every 30 minutes until it is completely frozen and granular throughout.

Scrape/scoop the granita into stemmed glasses or small dessert dishes. Enjoy it as is, or top with whipped cream.  Enjoy immediately.
