How this Started

For years, I loved coffee. Until I couldn't drink it anymore (and you know what... that happened at the SAME time that we were becoming coffee roasters...)

After our eighth child, my body crashed — adrenal fatigue, my doctor said. No caffeine. Seriously? I couldn't imagine getting through the day without that boost. But determined to get better, I switched to decaf.

And that's when I realized the problem: while Eric could enjoy incredible single-origin espresso, my only option was a bland decaf blend that tasted terrible and was often decaffeinated with chemicals. YUCK. I craved the taste of my favorite regular coffee.

That's when we had a light-bulb moment.

So many others who need to avoid or limit caffeine were facing the same problem. We decided to be intentional and focus this roastery on crafting exceptional decaf roasts. Because coffee is for everyone, caffeine isn't.

Why Swiss Water?

Swiss Water® Process is the only chemical-free method of decaffeination. Instead of using volatile solvents like methylene chloride, the beans are soaked in a caffeine-free green coffee extract.

The caffeine transfers into the solution while the flavor compounds stay in the bean. The solution is then processed through activated charcoal to remove the caffeine, and the beans are dried back to their original moisture level. The result: coffee that's 99.9% caffeine-free, with no chemical residue. It's also 3rd-party certified to be mold-free.
