Papua New Guinea (PNG) farms can accommodate two crop cycles per year due to its famously mineral-rich, volcanic topsoil and jungle climate. 

This Fair Trade Organic is grown in the Eastern Highlands, specifically Ivangoi, Purosa and Okapa valleys by over 3,000 farmers certified as FTO through the Highland Organic Agricultural Cooperative.

Acidity: Medium/Balanced

Aroma: Sweet raw sugar

Body: Rich/Creamy

Milling Process: Washed

Tasting Notes: Sweet Apricot, Caramel, Cocoa

The growing altitude for PNG Purosa is 2000 - 5000 meters above sea level. The varietals are Bourbon and Typica Hybrids.  The harvest period is September - December.

The Swiss Water Process is a chemical-free method for removing caffeine from green coffee. It involves soaking green coffee in fresh water until it reaches a saturation level that allows the dissolvable solids, including caffeine, to be removed. Caffeine-free green coffee extract (GCE) is then introduced to the beans, which causes the caffeine molecules to bind to the GCE. The now-decaffeinated coffee is then dried to the proper moisture content and rested before shipment.
