The Decaf Project

spearheaded by coffee expert James Hoffmann, is an exciting initiative that showcases three distinct decaffeination methods alongside a non-decaf option, all crafted from the same exceptional coffee lot.

Comparing these three popular decaffeination methods, the project is a celebration of decaf and aims to provide the first ever widespread compare & contrast tasting of high-quality decaffeinated coffees, process by process. 

People all over the world will be participating in a live tasting of this coffee on December 15th.  We are proud to be one of only 23 roasters in North America who are able to offer The Decaf Project Taking kits. The Coffee Selected 

La Virgen, cultivated in the highlands of Guadalupe, Huila, Colombia—a region known for its rich coffee-growing heritage.

The dedicated coffee families of Guadalupe have cultivated their craft through generations, producing high-quality coffee with a deep commitment to environmental sustainability. With farms averaging 5 hectares, many of these growers have achieved Rainforest Alliance Certification and are fully compliant with EUDR standards, ensuring responsible farming practices that protect their environment and communities.

For the Decaf Project one special lot of La Virgen was divided into four parts—three were decaffeinated using different methods (Swiss Water, CO2, and Ethyl Acetate) and one remains as an unprocessed washed coffee.

What’s in the Set:

Each set includes 1 pound (about 454 grams) of WHOLE BEAN coffee total, broken down into 4 (4oz/113g) bags with a cupping book + FREE SHIPPING.

• 4 oz/113g pack of La Virgen (Regular): A washed coffee that captures the natural essence of Guadalupe’s terroir. This coffee is caffeinated.

• 4 oz/113g pack La Virgen – Swiss Water® Decaf: Decaffeinated using the Swiss Water® Process, a gentle, chemical-free method that preserves the coffee’s full flavors while removing caffeine.

• 4 oz/113g pack La Virgen – Carbonic Natural Decaf: Decaffeinated using CR3-Kaffeeveredelung’s subcritical CO2 process, this cutting-edge method maintains the integrity and flavor of the original coffee.

• 4 oz/113g pack La Virgen – Ethyl Acetate Decaf: Decaffeinated by Coffein Co., this process uses ethyl acetate to create a smooth and rich decaf experience.
